Creamy Amaranth Hot Chocolate


  • 300ml milk of choice (we used cashew milk)
  • 200ml water
  • 4 tblsp raw cacao powder
  • 4 tblsp puffed amaranth
  • 4 Medjool dates (pitted)
  • 1 tblsp maple syrup or sweetener


Put all the ingredients in a large saucepan and bring to the boil and cook on a medium to low heat for 10-12 minutes stirring occasionally.

Take the pan off the heat and blend with a hand blender for 2-3 minutes until creamy (the more you blend the creamier it gets)

Pour into cups and serve

(this can also be chilled and eaten like a chocolate cream)
