Esteira’s Granola Recipe

Esteira from the Panacea head office has given us her trademark granola recipe. She writes:

Ever on the search for new breakfast foods which will actually keep me full for the morning but aren’t packed full of sugar, I decided to slightly alter my mum’s granola recipe, trying to raise the protein content and based on ingredients I had at home, I have created my granola with a higher percentage of seeds and with coconut oil rather than vegetable oil, which gives the cereal a more coconutty flavour. I chose date syrup as dates contain potassium, iron and magnesium and a number of trace elements.

Ingredients:

  • 100g sunflower seeds
  • 100g sesame seeds
  • 50g almonds (flaked)
  • 50g walnuts (chopped)
  • 75g desiccated coconut
  • 300g porridge oats
  • 100g date syrup
  • 100g coconut oil (melted)
  • 100ml water
  • 1 tsp vanilla essence

Method:

Combine the first 6 ingredients in a large mixing bowl.

Whisk together the oil, water, date syrup and vanilla.

Pour it over the dry ingredients and mix well.

Spread on a baking tray and bake for 20 – 30 minutes at 180 degrees.

Stir occasionally to start with and then more frequently until you feel it is done to your liking.
