Fluffy Protein Pancakes

Protein Pancakes
Pancake Ingredients:

20g coconut flour
15g Pulsin rice protein (We used Pea protein)
1 large egg
2tbs unsweetened almond milk
1/4 tsp bicarbonate of soda
Lucy Bee coconut oil for oiling the pan

Filling ingredients:

2 tbs plain greek yoghurt or high protein yoghurt
1tsp Meridian cashew butter (We used Almond Butter)
2tsp xylitol
1tsp raw cacao powder
1tsp Aduna baobab powder

Pancake method:

Mix all the dry ingredients together.
Add the egg and almond milk and ensure that it is all mixed thoroughly.
Heat a pan on high and melt some coconut oil.
Get one tablespoon of mixture and flatten out slightly using the spoon.
Repeat as many times as you can fit in your pan!
Cook for 1 minute and flip over for another minute.

Filling method:

Heat everything in a pot on low apart from the cacao and baobab, constantly stirring.
When the xylitol and cashew butter has melted, take off the heat and add in the cacao and baobab.
When the pancakes are ready, spread a bit of filling in between each pancake.

Top with fresh berries, coconut flakes and bee pollen if desired!
