Raw Vegan Gluten Free (Not) Hot Cross Buns

Ingredients
Buns
450g Gluten Free Oats
450g Coconut Flour
510g Ground Almonds
1 tbsp Cinnamon
1 tsp Mixed Spice
1 tsp Ginger Powder
1/2 tsp Ground Vanilla/ Vanilla Essence
400g Pitted Dates
2 tbsp Maple/Agave Syrup
355ml Water
100g Raisins
100g Dried Cranberries
Icing
20g Coconut Oil
100g Coconut Cream
20g Agave Syrup
30g Blueberries
125ml WaterRecipe makes about 15 buns 

 

Method

For the buns:
In a blender or food processor, whizz the oats, coconut flour, ground almonds and spices to produce a fine powder
Mix in dates until broken down mix is a fine crumby texture.
Add the water and syrup and mix until a dough is formed
By hand mix in the cranberries to the dough until evenly distributed
Form the buns and glaze the surface with a small amount of syrup

To make the icing:
Mix all of the ingredients in a blender until a creamy mixture is formed

Pipe on the cross or any other decoration.
